Step-By-Step Instructions
  1. In a large mixing bowl, combine the ground turkey, fresh breadcrumbs, minced onion, garlic, chopped fresh sage, Italian seasoning, eggs, and grated parmesan. Mix gently until just combined and let rest for about 5 minutes.
  2. Scoop out portions and form them into 1-2 inch meatballs, placing them on a plate with space in between.
  3. Heat a skillet over medium heat, add oil, and brown the meatballs on all sides for approximately 6-8 minutes, reaching an internal temperature of 165°F.
  4. In the same skillet, reduce heat to medium-low and add pumpkin puree, heavy cream, and an additional minced garlic clove. Stir and let simmer for about 5 minutes until thick.
  5. Add the browned meatballs to the skillet and simmer together for an additional 2-3 minutes to meld the flavors.
  6. Plate the meatballs in sauce and garnish with additional grated parmesan and fresh sage. Serve with salad or sautéed greens.
