  • 1 pound Italian sausage sweet or spicy
  • 2 cups bell peppers various colors
  • 1 medium red onion or yellow onion as substitute
  • 2 cups broccoli florets can swap with green beans or asparagus
  • 1 medium zucchini or yellow squash
  • 2 cups baby potatoes can be diced sweet potatoes
For Seasoning
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder or fresh garlic for stronger taste
  • 1 teaspoon onion powder omit for milder flavor
  • 1 teaspoon paprika or smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
For Garnishing
  • 2 tablespoons fresh parsley or basil or cilantro

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the bell peppers, red onion, broccoli, zucchini, and halve the baby potatoes.
  3. Slice the Italian sausage into bite-sized pieces and add to the vegetables.
  4. Drizzle olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss well.
  5. Spread the mixture in a single layer on a baking sheet.
  6. Bake for 30-35 minutes, stirring halfway through.
  7. Remove from oven and garnish with fresh parsley before serving.
