Step‑by‑Step Instructions
  1. Season the chuck roast generously with salt and pepper. In a large skillet, heat olive oil and sear the roast for 4-5 minutes on each side until browned.
  2. Transfer the seared roast to a slow cooker, layer with sliced onions and minced garlic, and pour in beef broth. Sprinkle seasoning and cover to cook on low for 7-8 hours or high for 4-5 hours.
  3. After cooking, remove the roast and shred with two forks, then mix it back into the juices in the slow cooker.
  4. Squeeze lime juice into the mixture and stir well. Let sit for 5 minutes to meld flavors.
  5. Warm tortillas as per package instructions, then assemble tacos by adding shredded beef and desired toppings.
