- Preheat a cast-iron skillet or griddle over medium-high heat for 3–5 minutes until a drop of water sizzles on the surface.
- Lay the burrito-sized flour tortillas flat. On one half of each, add a handful of ground beef, then season with salt, pepper, and garlic powder.
- Cook the tortillas beef-side down in the hot skillet for 2-3 minutes until browned and crispy.
- Flip the tortillas and sprinkle shredded cheese over the cooked beef, melting it for 1-2 minutes.
- Fold each tortilla in half, pressing down while cooking for another 2-3 minutes on each side until crispy.
- Remove the quesadillas, slice into triangles, and serve with your favorite toppings.
