Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes. Toss with olive oil, cinnamon, and nutmeg. Spread on a parchment-lined baking sheet and roast for 50-60 minutes, stirring halfway through.
- Lower oven to 375°F (190°C). In a bowl, combine roasted sweet potatoes, almond milk, vanilla extract, brown sugar, maple syrup, allspice, and soaked raisins. Mix gently.
- Grease a 9x13 inch baking dish with butter. Transfer sweet potato mixture, smoothing it out. Top with cubed butter and sprinkle marshmallows.
- Mix pecans with maple syrup, then sprinkle over sweet potato filling.
- Cover with foil and bake for 15 minutes. Remove foil and bake for another 15 minutes until golden and bubbling.
- Cool for 10-15 minutes before serving.
