For the Casserole
  • 4 cups Sweet Potatoes peeled and cubed
  • 2 tablespoons Extra Virgin Olive Oil can substitute with melted coconut oil
  • 1 teaspoon Ground Cinnamon or pumpkin spice
  • 1 teaspoon Ground Nutmeg essential spice
  • 1 cup Almond Milk any plant-based or dairy milk works
  • 1 teaspoon Vanilla Extract for rich flavor
  • 4 tablespoons Unsalted Butter or vegan butter
  • 1 cup Organic Brown Sugar light brown preferred
  • 1/2 cup Pure Maple Syrup or agave syrup
  • 1 teaspoon Ground Allspice
  • 1/2 cup Raisins soaked for optimal juiciness
  • 2 cups Marshmallows can use vegan marshmallows
  • 1 cup Raw Pecans or walnuts
For the Topping
  • 1 cup Pecans tossed with maple syrup

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes. Toss with olive oil, cinnamon, and nutmeg. Spread on a parchment-lined baking sheet and roast for 50-60 minutes, stirring halfway through.
  2. Lower oven to 375°F (190°C). In a bowl, combine roasted sweet potatoes, almond milk, vanilla extract, brown sugar, maple syrup, allspice, and soaked raisins. Mix gently.
  3. Grease a 9x13 inch baking dish with butter. Transfer sweet potato mixture, smoothing it out. Top with cubed butter and sprinkle marshmallows.
  4. Mix pecans with maple syrup, then sprinkle over sweet potato filling.
  5. Cover with foil and bake for 15 minutes. Remove foil and bake for another 15 minutes until golden and bubbling.
  6. Cool for 10-15 minutes before serving.
