  • 1 can Canned Salmon opt for wild-caught
  • 2 tablespoons Japanese Mayonnaise regular mayonnaise works in a pinch
  • 1-2 tablespoons Sriracha adjust for spice level
  • 1 tablespoon Soy Sauce choose low-sodium if desired
  • 1 tablespoon Rice Vinegar apple cider vinegar can be substituted
  • 1 tablespoon Toasted Sesame Oil olive oil is a milder alternative
  • 1 tablespoon Fresh Ginger optional, ground ginger can be used if fresh isn't available
  • 1 clove Minced Garlic optional, fresh is best but garlic powder is an alternative
For the Rice Base
  • 1 cup Rice fluffy jasmine or brown rice works well
For the Fresh Vegetables
  • 0.5 piece Cucumber sliced into thin rounds
  • 1 piece Carrot julienned or grated
  • 1 cup Edamame frozen edamame is quick and easy
  • 2 stalks Green Onions chopped into thin slices
For Optional Toppings
  • 1 piece Avocado optional, use lime juice to keep it fresh
  • 2 tablespoons Toasted Sesame Seeds optional garnish
  • 1 tablespoon Furikake optional garnish
  • 1 sheet Nori optional, adds umami

Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of rice under cold water until clear, then combine with 2 cups of water in a saucepan. Bring to boil, reduce heat, cover, and simmer for 15-20 minutes.
  2. Drain and flake the canned salmon, then mix with mayonnaise, Sriracha, soy sauce, vinegar, sesame oil, and optional ginger and garlic.
  3. Prepare vegetables: slice cucumber, julienne carrot, and cook edamame according to package instructions.
  4. Assemble bowls with rice topped with salmon mixture and arranged vegetables.
