Step-by-Step Instructions for Spicy Mexican Donkey Balls
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix thoroughly for about 2–3 minutes.
  3. Gently fold in the shredded cheddar cheese and crushed tortilla chips into the beef mixture.
  4. Add the beaten egg to your meatball mixture, ensuring it binds all the ingredients together securely.
  5. Shape the mixture into uniform meatballs, about the size of golf balls, and place them on a baking sheet lined with parchment paper.
  6. Heat olive oil in an ovenproof skillet over medium heat. Sear the meatballs for about 5 minutes, turning until golden brown.
  7. Pour the Mexican-style tomatoes with green chilies around the seared meatballs.
  8. Transfer the skillet to your preheated oven and bake for 15–20 minutes, checking for an internal temperature of 160°F (71°C).
