Cook Protein
- In a large pot, heat 1 tablespoon of neutral cooking oil over medium heat. Add 1 pound of ground chicken or pork and cook for 4-5 minutes, until browned. Transfer to a plate and set aside.
Sauté Aromatics
- In the same pot, add another splash of oil if necessary, and add 8 ounces of sliced shiitake mushrooms. Sauté for about 5 minutes until softened, then add in 1 diced shallot, 3 minced garlic cloves, and 1 tablespoon of freshly grated ginger. Cook for 2-3 minutes until fragrant.
Prepare Broth
- Stir in 3 tablespoons of white miso paste, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of hot chili oil. Pour in 6 cups of broth and bring to a boil. Reduce heat and simmer uncovered for about 20 minutes.
Boil Noodles
- Bring the broth back to a gentle boil, add 4 ounces of dry ramen noodles, and cook according to package instructions. Stir in the cooked ground meat and 1 cup of sweet corn.
Serve
- Ladle the hot ramen into bowls, garnish with soft-boiled egg halves, sliced green onions, and toasted sesame seeds. Drizzle with extra chili oil if desired.
