  • 1 tablespoon rice vinegar

Preparation Steps
  1. Wash and slice cucumbers into thin rounds, salt them, and allow to sit for 15-20 minutes to draw out moisture.
  2. Toast peanuts in a skillet over medium heat for 5-7 minutes until golden brown and fragrant.
  3. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, and optional chili flakes; whisk until smooth.
  4. Pat cucumbers dry, add to a large bowl with peanut sauce, and toss until well coated.
  5. Fold in toasted peanuts just before serving to retain their crunch.
  6. Serve at room temperature, garnished with extra peanuts and chili flakes if desired.
