Ingredients
  

For the Salmon

  • 1 tbsp Ginger Paste Can use fresh ginger
For the Rice Bowl
  • 1 cup Sticky Rice Can substitute half with cauliflower rice for lower-carb option
  • 1 cup Shelled Edamame Can swap with peas
  • 1 cup Persian Cucumbers Can substitute with regular cucumbers
  • 1 medium Avocados Guacamole can be used for a twist
For the Topping
  • 1/4 cup Spicy Mayo Adjust sriracha-to-mayo ratio to taste
  • 2 stalks Green Onions Can omit if necessary
  • 1 tbsp Furikake Can substitute with sesame seeds

Method
 

Preparation
  1. Remove the skin from your salmon fillet and cut it into 1-inch pieces.
  2. Whisk together coconut aminos, rice vinegar, toasted sesame oil, garlic paste, and ginger paste, and pour over salmon, marinate for 30 minutes.
  3. Preheat your oven to 400°F (200°C) and prepare a sheet pan.
  4. Arrange marinated salmon on the sheet pan and bake for 6-8 minutes until cooked through.
  5. Switch the oven to broil for an additional 2 minutes to get crispy edges.
  6. Cook sticky rice according to package instructions, then fluff with a fork.
  7. Assemble the bowl starting with sticky rice, followed by baked salmon, edamame, cucumber, and avocado.
  8. Drizzle spicy mayo, sprinkle with furikake, and garnish with green onions.
