Ingredients
  

For the Quesadilla
  • 4 tortillas whole wheat or regular tortillas
  • 2 cups spinach, fresh washed and chopped
  • 1 cup feta cheese, crumbled or more to taste
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon garlic powder optional
  • salt to taste

Method
 

Quesadilla Preparation
  1. In a skillet over medium heat, add olive oil. Once hot, add the spinach and cook until wilted, about 2 minutes.
  2. Add garlic powder and salt, stirring to combine.
  3. On one half of a tortilla, sprinkle desired amount of feta cheese, then top with the cooked spinach.
  4. Fold the tortilla over and place in the skillet. Cook for 2-3 minutes until golden brown, then flip and brown the other side.
  5. Repeat with the remaining tortillas. Cut into wedges and serve warm.
