  • 5 oz Spring Mix Salad Greens Approximately one standard bag
  • 1 cup Cherry Tomatoes Halved
  • 1/2 cucumber Cucumber Sliced (English cucumber works best)
  • 1/4 red onion Red Onion Thinly sliced; omit if serving kids
  • 1/4 cup Feta Cheese Crumbled; substitute goat cheese for a milder flavor
  • 1/4 cup Walnuts/Pecans Chopped and toasted
For the Dressing
  • 1/4 cup Balsamic Vinegar Foundation of the dressing
  • 2 tablespoons Honey Balance the acidity; use maple syrup for a vegan option
  • 1/2 cup Olive Oil Extra-virgin recommended
  • Salt and Pepper Add to taste

Method
 

Steps
  1. Rinse the Spring Mix Salad greens thoroughly under cold water and pat them dry. Set aside in a large mixing bowl.
  2. Add halved cherry tomatoes and sliced cucumber to the spring mix. If using red onion, thinly slice and add to the mix.
  3. Sprinkle crumbled feta cheese and chopped walnuts or pecans over the salad. Toast nuts for extra flavor if desired.
  4. In a medium jar, combine balsamic vinegar, honey, and olive oil. Whisk until glossy and slightly thickened, then season with salt and pepper.
  5. Drizzle dressing over the salad, then toss gently to combine the flavors without bruising the greens.
  6. Serve immediately to maintain the crispness of the greens and toppings.
