Cooking Steps
- Bring a large pot of salted water to a rolling boil. Add the shell pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
- Pat the steak bites dry with paper towels and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the steak for 2-3 minutes per side until browned and cooked to desired doneness. Transfer to a plate.
- Lower the heat and add butter to the skillet. Once melted, stir in garlic and sauté for about 1 minute.
- Pour in heavy cream and bring to a gentle simmer. Gradually whisk in parmesan cheese until melted and smooth. Adjust thickness with reserved pasta water if needed.
- Add drained pasta to the sauce and toss to coat. Allow to absorb flavors for 1-2 minutes.
- Serve the pasta in bowls topped with seared steak bites.
