  • 2 tablespoons olive oil
For the Queso Sauce
  • 1 cup heavy cream can use half-and-half
  • 4 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 pinch cayenne pepper adjust to taste
For Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 pinch cayenne pepper adjust to taste
For Optional Toppings
  • 1 bunch cilantro optional
  • 1 cup diced tomatoes
  • 1 cup jalapeños fresh or pickled
  • 1 cup sour cream

Step-by-Step Instructions
  1. In a medium saucepan, bring 2 cups of beef broth, 2 tablespoons of butter, 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika to a vigorous boil. Stir in 1 cup of rice, cover, and reduce heat to low. Let simmer for 15-18 minutes.
  2. Slice steak into thin strips, season with salt, pepper, 1 teaspoon of garlic powder, and 1 teaspoon each of paprika and cumin. Heat 2 tablespoons of olive oil in a skillet and cook steak for 3-4 minutes on each side.
  3. In a small saucepan, melt 1 cup of heavy cream over low heat. Gradually whisk in 4 ounces of cream cheese, then add 1 cup each of cheddar and Monterey Jack cheese, stirring until melted. Season with garlic powder and cayenne.
  4. Divide rice into serving bowls, top with steak strips, and drizzle with queso sauce. Add optional toppings like cilantro, tomatoes, jalapeños, or sour cream.
