- In a small bowl or jar, combine olive oil, balsamic vinegar, honey, Dijon mustard, and minced garlic. Season with salt and pepper to taste. Whisk until emulsified and set aside.
- Remove ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides with kosher salt and pepper.
- Preheat the grill or grill pan over medium-high heat for about 5 minutes. Grill the steak for 3-4 minutes per side until medium-rare. Let the steak rest for 5 minutes before slicing.
