Ingredients

  • 8 oz Flat Rice Noodles Substitute with wider egg noodles if needed.
For the Stir-Fry

For the Protein
  • 1 lb Ground Chicken/Shrimp Tofu can be used as a vegetarian option.
For the Vegetables
  • 1 cup Bell Peppers Sliced.
  • 1 cup Broccoli Chopped.
For the Sauce
  • 3 tbl Soy Sauce Low-sodium option available.
  • 1-2 tbl Sugar Brown sugar adds depth; honey can work too.
  • 1 tbl Chili Paste Adjust to taste.

Method
 

Preparation Steps
  1. Bring a large pot of water to a rolling boil. Add the flat rice noodles and cook for 4-6 minutes until al dente, then drain and rinse under cold water.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  3. Add 3 tablespoons of minced garlic and sauté for about 1 minute until fragrant but not burned.
  4. Add ground chicken or shrimp to the pan and stir-fry for 3-5 minutes for chicken or 2-3 minutes for shrimp until fully cooked.
  5. Toss in sliced bell peppers and broccoli, stir-frying for 2 minutes until vibrant and slightly tender.
  6. Add the cooked noodles along with 3 tablespoons of soy sauce and 1-2 tablespoons of sugar, tossing everything together gently for 2-3 minutes.
  7. Turn off the heat and plate the noodles. Garnish with fresh herbs or a squeeze of lime if desired and serve immediately.
