Ingredients
  

For the Chicken
  • 2 pounds Chicken Breasts Can substitute with boneless, skinless chicken thighs for a more tender bite.
  • 4 cloves Garlic Use fresh for the best results.
  • 1/4 cup Lemon Juice Freshly squeezed is preferred.
  • 1 medium Onion Can substitute with shallots for a milder flavor.
  • 1 cup Water Essential for cooking the chicken.
  • 3 tablespoons Olive Oil Can swap with any light cooking oil.
  • 2 tablespoons Red Wine Vinegar Substitute with apple cider vinegar or extra lemon juice.
  • 2 teaspoons Oregano Dried oregano works well.
  • 1 teaspoon Allspice Omit for a more traditional gyro flavor.
  • 1 teaspoon Lemon Pepper Adjust to taste.
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Full-fat for richness or fat-free for a lighter option.
  • 1 medium Grated Cucumber Squeeze out excess moisture before mixing.
  • 1/4 cup Fresh Parsley Substitute with fresh dill for a tasty twist.
  • 1 teaspoon Salt Adjust according to your taste preferences.

Method
 

Preparation Steps
  1. Spray the inside of your slow cooker with nonstick cooking spray. Place the chicken breasts inside evenly.
  2. In a bowl, combine minced garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir until well-blended.
  3. Pour the marinade over the chicken breasts in the slow cooker. Set to HIGH for 3-4 hours or LOW for 6-8 hours.
  4. While cooking, prepare the tzatziki sauce by mixing Greek yogurt, garlic, grated cucumber, parsley, and salt. Refrigerate for at least 1 hour.
  5. Once cooked, shred the chicken in the slow cooker with two forks.
  6. Serve the shredded chicken on warm pocketless pita bread with tzatziki sauce, tomatoes, onions, cucumbers, and lettuce.

Notes
