  • 2 cups Tomatoes Any ripe variety like heirloom or cherry.
For the Dressing
  • 1/4 cup Apple Cider Vinegar Brightens flavor.
  • 1 tablespoon Sugar Honey or agave can be alternatives.
  • 1/4 cup Water Dilutes acidity.
  • 1/2 teaspoon Sea Salt Enhances flavor.
  • 1 to taste Black Pepper Freshly cracked preferred.
  • 1/4 cup Extra Virgin Olive Oil Adds richness.

Method
 

Preparation
  1. Wash the cucumbers, tomatoes, and onions. Peel, slice cucumbers, cut onions into rings, and wedge tomatoes.
  2. In a bowl, combine vinegar, sugar, and water; whisk until sugar dissolves. Add salt, pepper, oil, and whisk until smooth.
  3. In a salad bowl, combine cucumbers, onions, and tomatoes. Toss gently to distribute.
  4. Pour dressing over the salad, toss gently to coat everything evenly.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
