  • 1 large onion diced
  • 1 tablespoon oil avocado, canola, or olive
  • 1 tablespoon butter salted or unsalted
  • 3 large cloves garlic finely chopped
For the Sauce
  • 2 cups beef broth (about one 15 oz. can)
  • 1 cup dry red wine (Cabernet Sauvignon recommended)
  • 2 tablespoons brown sugar dark or light
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon thyme fresh or 1 teaspoon dried
  • 1 tablespoon cornstarch for thickening the sauce if desired

Method
 

Step-by-Step Instructions
  1. Generously season the short ribs with salt and pepper on all sides.
  2. In a hot skillet, add butter and oil. Sear the short ribs for about 30 seconds on each side until browned.
  3. Transfer the seared short ribs to the slow cooker.
  4. In the skillet, sauté onion and garlic until translucent.
  5. Pour in beef broth, red wine, brown sugar, tomato paste, Worcestershire sauce, and thyme. Simmer for 10-15 minutes.
  6. Pour the sauce over the short ribs in the slow cooker. Cook on low for 8 hours or high for 4 hours.
  7. If desired, mix cornstarch with a cup of sauce and return to the slow cooker to thicken for an additional 30 minutes.
  8. Serve hot, spooning sauce generously over the ribs.
