Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine softened unsalted butter, oil, brown sugar, and honey. Beat on medium speed for 2-3 minutes until creamy and smooth.
  2. Add one egg and the vanilla extract. Mix on low speed until just combined, about 30 seconds.
  3. Gradually add the all-purpose flour, baking soda, salt, and cinnamon while mixing on low speed. Mix just until absorbed, about 1-2 minutes.
  4. Drop rounded tablespoons of dough onto parchment-lined baking sheets, spaced 2 inches apart.
  5. Cover baking sheets and refrigerate dough for at least 1.5 hours.
  6. Preheat oven to 350°F (175°C). Prepare additional baking sheets lined with parchment.
  7. Bake cookies for 10 minutes, until edges are set and golden while centers remain soft.
  8. Sprinkle warm cookies with fleur de sel and cool on the baking sheet for about 5 minutes before transferring to a wire rack.
