Method
 

Step-by-Step Instructions
  1. Cut the pork tenderloin into bite-sized pieces, season generously with salt and pepper.
  2. In a bowl, combine the flour and cornstarch for the coating.
  3. Coat each piece of pork in the beaten egg and then in the flour-cornstarch mixture.
  4. Heat 1 inch of vegetable oil in a skillet over medium-high heat.
  5. Fry the coated pork pieces in batches for 4-5 minutes until golden brown.
  6. Whisk together soy sauce, rice vinegar, ketchup, brown sugar, and sesame oil for the sauce.
  7. Sauté minced garlic and ginger in the skillet until fragrant.
  8. Add chopped onion and bell peppers; cook for 3-4 minutes.
  9. Pour the prepared sauce over the sautéed vegetables and simmer for 2-3 minutes.
  10. Fold in the fried pork, mixing until well coated with the sauce.
  11. Adjust the sauce consistency with water if needed.
  12. Serve Sweet and Sour Pork over rice and garnish if desired.
