  • 1 pound Chicken Breast freshly cooked and golden-brown
For the Sauce
  • 1/2 cup Sweet Chili Sauce add sriracha for extra spice if desired
For the Crunch
  • 1 cup Cucumber fresh and crisp, sliced thinly
  • 1 cup Bell Peppers cut into thin strips
  • 1 cup Carrots julienne for texture
Optional Additions
  • 1/2 cup Cheese shredded, use sparingly
  • 1 piece Avocado sliced
  • 1/4 cup Herbs fresh cilantro or basil

Preparation Steps
  1. Season the chicken breast with salt and pepper. Heat a skillet over medium-high heat with a drizzle of oil. Cook the chicken for 6-7 minutes on each side, until golden brown and reaches 165°F.
  2. Transfer the chicken to a cutting board and let it rest for at least 5 minutes, then slice thinly against the grain.
  3. In a mixing bowl, toss the sliced chicken with sweet chili sauce until evenly coated.
  4. Wash and slice the cucumber, bell peppers, and carrots into thin strips.
  5. Warm the tortillas in the microwave for 10-15 seconds or on a skillet over medium heat.
  6. Lay a tortilla flat, layer with chicken, sliced veggies, and optional ingredients. Avoid overloading.
  7. Fold the sides of the tortilla inward and roll tightly. Cut diagonally in half to serve.
