Ingredients
  

For the Tacos
  • 2 medium Sweet Potatoes peeled and diced
  • 1 can Black Beans drained and rinsed
  • 8 pieces Corn Tortillas warm before serving
For Seasoning
  • 2 tbsp Olive Oil for roasting
  • 1 tsp Cumin ground
  • 1 tsp Chili Powder
  • to taste Salt
  • to taste Pepper
For Toppings
  • 1 medium Avocado ripe and sliced
  • 1/4 cup Cilantro chopped
  • 1 piece Lime for squeezing
  • 1/2 cup Salsa your favorite variety

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet.
  2. Peel and dice sweet potatoes, toss with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread sweet potatoes on baking sheet and roast for 20-25 minutes.
  4. While roasting, heat black beans in a medium saucepan over medium heat for 5-7 minutes.
  5. Warm corn tortillas in a skillet or microwave.
Assembly
  1. Assemble tacos with roasted sweet potatoes, black beans, avocado, cilantro, lime juice, and salsa.
  2. Serve warm and enjoy!
