  • 2 medium Sweet Potatoes peeled and sliced into rounds
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Toppings
  • 8 ounces Brie Cheese sliced
  • 1 cup Dried Cranberries
  • 1/2 cup Toasted Pecans can substitute walnuts or pistachios
  • 2 sprigs Fresh Rosemary or Thyme for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ¼-inch rounds.
  3. Arrange the rounds in a single layer on the prepared baking sheet.
  4. Drizzle the sweet potato rounds with olive oil, then season with salt and pepper.
  5. Bake for 20–25 minutes, flipping halfway through until tender and caramelized.
  6. Top each round with brie cheese and return to the oven for an additional 5 minutes.
  7. Sprinkle with cranberries and pecans, and garnish with fresh herbs before serving.
  8. Allow to cool slightly and serve warm on a platter.
