Method
 

Preparation Steps
  1. Step 1: Prepare Chashu Pork - Marinate pork belly, seal in a vacuum bag, sous vide at 170°F (77°C) for 10-11 hours. Cool, slice, and set aside.
  2. Step 2: Make Tare - For Soy Bacon Tare, simmer diced bacon with soy sauce, sake, mirin, and miso. For Miso Tare, mix miso, sake, mirin, and salt, simmer.
  3. Step 3: Medium Boiled Eggs - Boil eggs for 6-7 minutes, transfer to ice bath, peel and set aside.
  4. Step 4: Cook Noodles and Mushrooms - Boil noodles for 4 minutes, add mushrooms for the last 2-3 minutes, drain and rinse.
  5. Step 5: Assemble Ramen - In bowls, add tare, ladle broth, then noodles, mushrooms, top with chashu pork, halved eggs, and green onions.
