Ingredients
  

For the Sandwich
  • 2 slices Rustic Bread substitute with ciabatta, sourdough, or focaccia if desired
  • 8 oz Fresh Mozzarella buffalo mozzarella for a richer flavor
  • 2 medium Ripe Tomatoes select juicy, in-season tomatoes
  • 4 leaves Fresh Basil Leaves reserve some for garnish
  • 1 tbsp Butter or Olive Oil for grilling the sandwich
  • 2 tbsp Balsamic Glaze optional drizzle
For the Basil Pesto
  • 2 cups Fresh Basil Leaves the star of the pesto
  • 1/2 cup Grated Parmesan Cheese substitute with nutritional yeast for a vegan version
  • 1/4 cup Pine Nuts or walnuts/sunflower seeds as alternatives
  • 1 clove Garlic for flavor
  • 1/2 cup Olive Oil for blending the pesto
  • to taste Salt & Black Pepper for seasoning

Method
 

Prepare the Basil Pesto
  1. Rinse and dry fresh basil leaves, removing thick stems. In a food processor, combine basil, grated Parmesan, pine nuts, and garlic. Pulse until chopped, then drizzle in olive oil while blending until smooth. Season with salt and pepper, then set aside.
Assemble the Sandwich
  1. Spread a layer of basil pesto on one side of each bread slice. Layer fresh mozzarella, sliced tomatoes, and basil leaves. Drizzle with balsamic glaze if desired, then top with remaining bread slices.
Grill the Sandwich
  1. Heat a panini press or skillet over medium heat. Spread butter or brush olive oil on the outer sides of the sandwich. Grill for 3-4 minutes per side, until the bread is golden and cheese melts.
Rest and Serve
  1. Remove the sandwich from heat and let sit for one minute before slicing. Serve warm, optionally with chips or salad.
