Ingredients
  

For the Salad
  • 2 large Persian or English cucumbers
  • 1 teaspoon salt for drawing out moisture
  • 2 cloves fresh garlic minced
For the Dressing
  • 3 tablespoons sesame oil or substitute with another oil if needed
  • 1 tablespoon sugar to balance flavors
  • 1 tablespoon chili oil adjust for heat preference

Method
 

Preparation Steps
  1. In a medium bowl, combine sesame oil, minced garlic, sugar, and chili oil. Stir vigorously for about 30 seconds until the sugar dissolves.
  2. Cut off both ends of the cucumbers and spiralize them using a spiralizer. Aim for long, uniform spirals.
  3. Place spiralized cucumbers in a large bowl and sprinkle with salt. Massage gently for about 1 minute, then let sit for 8-10 minutes.
  4. Rinse the cucumbers under cold water for about 1 minute, then pat dry with a kitchen towel.
  5. Return cucumbers to the bowl and toss with the prepared dressing using tongs for about 30 seconds.
  6. Cover with plastic wrap and refrigerate for about 10 minutes before serving.
  7. After chilling, give the salad a quick toss and serve garnished with additional chili oil or sesame seeds if desired.
