  1. In a mixing bowl, combine the minced lemongrass, garlic, and shallots, then add fish sauce, soy sauce, brown sugar, lime juice, and black pepper, stirring until the sugar dissolves.
  2. Add the chicken thighs to the marinade, ensuring each piece is coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Heat a tablespoon of vegetable oil in a skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-7 minutes on each side until golden brown and cooked through.
  4. Transfer the chicken to a cutting board and let it rest, then slice and garnish with cilantro and lime wedges before serving.
