  • 2 tbl rice vinegar adds tang

  • 1 tbl sesame oil for authentic flavor

Method
 

Preparation Steps
  1. In a medium mixing bowl, whisk together granulated white sugar, toasted sesame seeds, and crushed garlic until well combined. Stir in soy sauce, rice vinegar, Chinese chili oil, and sesame oil. Set aside.
  2. Trim the ends of the English cucumbers, then slice diagonally to create spiral cuts and flip to create accordion-style pieces.
  3. Place cut cucumbers in a bowl, sprinkle generously with salt, and massage into the cucumbers. Let sit for 8 to 10 minutes.
  4. Rinse cucumbers under cold water to remove salt and pat dry with paper towels.
  5. Drizzle the prepared marinade over rinsed cucumbers and toss until well coated. Serve immediately or chill for 10 minutes before serving.
