Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and diced onion, cooking until browned and soft, about 6-8 minutes.
- Stir in taco seasoning and water, mixing thoroughly. Let simmer for 2-3 minutes until thickened.
- Add black beans and diced tomatoes to the beef mixture. Stir and allow to heat for an additional 2 minutes.
- Spread half of the crushed corn chips in the baking dish, layer with beef mixture, and top with half of the cheddar cheese. Repeat layers.
- Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
- Allow to cool for 5 minutes before serving. Top with sour cream, lettuce, and diced tomatoes.
