Ingredients
  

For the Casserole
  • 1 pound Ground Beef Substitute with ground turkey, chicken, or plant-based meat if desired.
  • 1 tablespoon Olive Oil Any cooking oil can be used.
  • 1 medium Onion Finely diced.
  • 1 packet Taco Seasoning Store-bought or homemade.
  • 1/4 cup Water
  • 1 can Black Beans Drained and rinsed.
  • 1 can Diced Tomatoes with Green Chilies Choose mild or hot based on preference.
For the Layers
  • 4 cups Corn Chips or Doritos Use Fritos for classic or Doritos for more flavor.
  • 2 cups Cheddar Cheese Can use Monterey Jack or a Mexican cheese blend.
For Toppings
  • 1 cup Sour Cream Greek yogurt can be used for a healthier option.
  • 2 cups Shredded Lettuce
  • 1 cup Diced Tomatoes Optional garnishes include olives and green onions.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and diced onion, cooking until browned and soft, about 6-8 minutes.
  3. Stir in taco seasoning and water, mixing thoroughly. Let simmer for 2-3 minutes until thickened.
  4. Add black beans and diced tomatoes to the beef mixture. Stir and allow to heat for an additional 2 minutes.
  5. Spread half of the crushed corn chips in the baking dish, layer with beef mixture, and top with half of the cheddar cheese. Repeat layers.
  6. Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
  7. Allow to cool for 5 minutes before serving. Top with sour cream, lettuce, and diced tomatoes.
