For the Sauce
  • 1 can Coconut Milk Opt for full-fat for a rich texture.
  • 2 tbsp Jamaican Curry Powder For authentic flavor.
  • 1 tbsp Brown Sugar Can swap for honey or agave syrup.

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground pork, minced garlic, chopped scallions, grated ginger, and jerk seasoning. Mix until thoroughly combined and form into golf ball-sized meatballs.
  2. Heat a large skillet over medium-high heat, add oil, and brown the meatballs for 3-4 minutes per side until golden brown.
  3. Remove meatballs and in the same skillet, add coconut milk and Jamaican curry powder. Stir and simmer for about 5 minutes.
  4. Add the meatballs back into the skillet, cover, and let simmer in the sauce for an additional 10 minutes.
  5. Serve the meatballs and sauce over fluffy jasmine rice or quinoa.
