- In a large mixing bowl, combine the ground pork, minced garlic, chopped scallions, grated ginger, and jerk seasoning. Mix until thoroughly combined and form into golf ball-sized meatballs.
- Heat a large skillet over medium-high heat, add oil, and brown the meatballs for 3-4 minutes per side until golden brown.
- Remove meatballs and in the same skillet, add coconut milk and Jamaican curry powder. Stir and simmer for about 5 minutes.
- Add the meatballs back into the skillet, cover, and let simmer in the sauce for an additional 10 minutes.
- Serve the meatballs and sauce over fluffy jasmine rice or quinoa.
