Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini and drain excess moisture using a kitchen towel.
  3. In a mixing bowl, whisk together flour, baking powder, salt, and garlic powder.
  4. Add the drained zucchini, mozzarella, Parmesan, eggs, olive oil, and Italian seasoning to the bowl and mix well.
  5. Knead the dough on a floured surface for 1-2 minutes until smooth.
  6. Shape the dough into a rectangle about ½ inch thick and cut into strips.
  7. Place the strips on the baking sheet and bake for 15-18 minutes until golden brown.
  8. Allow to cool slightly before serving with marinara sauce.
