Step-by-Step Instructions
  1. In a stand mixer, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Gradually mix in the egg, molasses, and vanilla extract until well blended.
  3. Add salt, baking soda, cinnamon, oats, and flour, scraping the bowl frequently.
  4. Drop generous amounts of dough onto parchment-lined baking sheets, spaced about 2 inches apart.
  5. Preheat your oven to 375°F (190°C) and bake for 12-14 minutes.
  6. Remove from the oven and let cool on the pan for 5 minutes before transferring to a wire rack.
  7. For the filling, combine butter, powdered sugar, and marshmallow crème until smooth.
  8. Gradually add heavy whipping cream to achieve your desired frosting consistency.
  9. Pipe the filling onto one cooled cookie and sandwich with another cookie.
