Method
 

Preparation
  1. Wash cucumbers and pineapple. Dice cucumbers into bite-sized pieces, peel and cut pineapple into chunks, slice red onion, and chop cilantro.
  2. In a large mixing bowl, combine diced pineapple, cucumbers, sliced red onion, and chopped cilantro. Toss gently.
  3. In a small bowl, whisk together lime juice and honey for the dressing.
  4. Pour dressing over salad mixture and toss to coat evenly.
  5. Season with salt and pepper to taste, then toss again.
  6. Serve immediately or chill for 15-30 minutes.
