Method
 

Step-by-Step Instructions
  1. Thaw the frozen puff pastry in the refrigerator for about 4 hours or overnight. Roll it out to approximately 1/16 inch thick.
  2. Cut the rolled pastry into approximately 30 circles and dock them with a fork.
  3. Preheat oven to 400°F (200°C) and arrange pastry circles on a baking sheet. Add Gruyère cheese and tomato slices on each.
  4. Season each tart with kosher salt, black pepper, and chopped thyme.
  5. Bake for 20-25 minutes until golden brown.
  6. Allow to cool slightly before serving hot or at room temperature.
