Ingredients

For the Chicken
  • 1 pound Diced Boneless Skinless Chicken Breasts Consider using boneless skinless thighs for juicier tacos.
  • 1 tablespoon Olive Oil Avocado oil can be swapped in for a subtle flavor change.
  • 1 teaspoon Smoked Paprika Regular paprika is a milder alternative.
  • 1 teaspoon Chili Powder Swap other spice blends for a new flavor profile.
  • 1 teaspoon Garlic Powder Fresh minced garlic works well for a bolder flavor kick.
  • 1/2 teaspoon Salt Opt for sea salt for a cleaner taste.
For the Salsa
  • 1 cup Fresh Pineapple Canned pineapple can work—just drain it thoroughly.
  • 1/2 cup Red Onion Feel free to substitute with white or yellow onion.
  • 1/4 cup Fresh Cilantro Omit for a cilantro-free version or swap it with parsley.
  • 1 tablespoon Lime Juice Freshly squeezed is best, but bottled lime juice can do.
For the Tacos
  • 8 pieces Small Corn or Flour Tortillas Consider gluten-free tortillas for a gluten-free option.

Equipment

  • skillet
  • mixing bowl
  • small bowl

Method

Instructions
  1. In a mixing bowl, toss the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt until evenly coated. Allow to marinate for about 5 minutes.
  2. Heat a large skillet over medium-high heat for about 2 minutes. Add the marinated chicken in a single layer and cook undisturbed for 3 minutes, then stir and cook for an additional 4-5 minutes until fully cooked.
  3. Prepare the salsa by combining the diced pineapple, finely chopped red onion, cilantro, and lime juice in a small bowl. Mix gently and set aside.
  4. Warm the tortillas in a dry skillet over medium heat for about 20-30 seconds on each side or wrap in a damp paper towel and microwave for 10-15 seconds.
  5. Assemble the tacos by taking a warmed tortilla, filling it with sautéed chicken, and topping with fresh salsa. Add extra cilantro or a squeeze of lime if desired.
